Ingredients
- 1 whole chicken, about 4 pounds
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 3 garlic cloves, minced
- 1 lemon, halved
Instructions
- Heat oven to 425°F.
- Pat the chicken dry and place it breast-side up in a roasting pan.
- Mix oil, salt, pepper, thyme, rosemary and garlic; rub over the chicken.
- Place lemon halves in the cavity.
- Roast until the thickest part of the breast and thigh reaches a safe internal temperature, checking with a food thermometer.
- Rest the chicken before carving and serving.
